TOMATO SALSA

Preparation Time :
20 minutes

Preparation Method :

  • Put chopped onion and garlic in a strainer; pour 2 cups of boiling water over them, let drain thoroughly. Discard water. Cool
  • Combine onions and garlic with chopped tomatoes, peppers, coriander, lime juice, salt and pepper. Refrigerate at least for 2 hours to blend flavours
  • Garnish with a few leaves of flat leaf parsley. Serve with tortillas and chicken.

INGREDIENTS

  • 3 large Ripe red tomatoes (peeled, deseeded and chopped into bite size pieces)
  • 2 Hot chile peppers finely chopped. (Remove the membrane and the seeds)
  • 3 tablespoons Minced coriander
  • 50 grams Onions (finely chopped) 
  • 3 small cloves Garlic (minced) 
  • 2 tablespoons Lime juice 
  • Salt and pepper to taste
