CRISPY FISH

Preparation Method :

  • Dust the fish fillets in cornflour and deep-fry in oil. Keep aside.
  • In a pan, heat oil and add the chopped garlic. Saute well and add the red chillies, kaffir lime leaves and fish stock.
  • Stir in the fish sauce, sugar, soya sauce, basil and cornflour mixed with water until the mixture achieves a coating consistency.
  • Pour the mixture over the fried fish fillets. Serve hot.

 

INGREDIENTS

  • 6 fish fillets, cleaned
  • 100 grams Cornflour
  • Peanut oil for deep-frying
  • 6 Garlic cloves 4, chopped
  • 6 red chillies, chopped
  • 8 Kaffir lime leaves
  • 500 ml Fish stock
  • 4 tablespoon Fish sauce
  • 4 teaspoon Sugar
  • 3 tablespoon Soya sauce
  • 15 Basil leaves, fried
