Fried prawns with broad beans – what a nutritious dish! It is made entirely with tasty elements like broad beans, prawns, sugar and other seasonings. The dry cherry and chopped onion is placed on top of the dish for its appealing and delicious taste.

20 minutes

Preparation Method :

  • Cook the beans in boiling salted water for 5 to 7 minutes until just tender. Drain well.
  • Mix together 1 tablespoon of the sherry, 1 teaspoon of the salt, pepper, egg white and 1 teaspoon of the corn flour (cornstarch) in a bowl.
  • Add the prawns (shrimp) and leave to marinate for 30 minutes.
  • Mix together the remaining sherry, salt and corn flour (cornstarch) with the sugar and water. Heat the oil in a pan.
  • Add the prawns (shrimp) and stir-fry for about 1½ minutes or until pink. Transfer to a serving dish.
  • Add the beans to the pan and stir-fry for a few seconds. Add the spring onion (scallion). Stir-fry for 30 seconds, and then add the sugar mixture.
  • Simmer, stirring, until thickened. Add to the prawns (shrimp).
  • Serve at once with noodles.


  • 300 grams baby broad beans, shelled
  • 2 tablespoon dry sherry
  • 5 teaspoons salt freshly ground pepper
  • 2 small egg white
  • 4 teaspoons corn flour
  • 1 kg uncooked prawns, shelled and deveined 
  • 1 teaspoon sugar
  • 2 tablespoon water
  • 4 tablespoons cooking oil
  • 2 spring onion, chopped
