FISH FILLETS PROVENCAL

There are different types of Fish Fillets that you can prepare on your dinner, but only the Fish Fillets Provencal can reach your needs. This dish is highly made of healthy ingredients. The appearance of dish comes with high class feature with delectable aroma.

Preparation Method :

  • Cut the fish into roughly 1 inch cubes. Coat the fish in the seasoned flour, shaking off any surplus flour.
  • Heat 1 tablespoon of the oil in a frying pan and sauté the onion very gently tor 6 to 8 minutes, until soft and golden.
  • Add the garlic and sauté for another minute, then add the tomatoes, olives, sugar, and salt and pepper to taste.
  • Stir for several minutes until the tomatoes begin to soften, then cover the pan and remove from the heat.
  • Meanwhile, heat the remaining oil in a large frying pan and, when sizzling hot, put in the pieces of fish and fry them over a moderate heat for about 10 minutes, turning frequently, until cooked through and lightly browned.
  • Drain the fish on kitchen paper then transfer to a serving dish, spoon the vegetables over and sprinkle with chives or chervil.

  • 1 kilogram white fish fillets, skinned 
  • 4 tablespoons unbleached white flour
  • Salt
  • Pepper 
  • Dried mixed herbs 
  • 8 tablespoons Cooking oil
  • 2 large onion, peeled, halved and thinly sliced
  • 4 cloves garlic, peeled and crushed 
  • 500 grams tomatoes, skinned, deseeded and chopped
  • 4 tablespoons black or green olives 
  • 2 teaspoon caster sugar 
  • Salt
  • Freshly ground black pepper 
  • 2 tablespoon snipped chives or chervil
