Preparation Method :

  • Wrap each cod fillet with one pancetta. Secure each fillet with a cocktail stick and reserve.
  • Heat the oil in a large frying pan and sear the wrapped cod fillet for about 2-3 minutes on each side.
  • Turn carefully, make sure not to break up the fish.
  • Simmer to low flame and continue cooking for about 2-3 minutes or until the fish is cooked thoroughly.
  • Caper Dressing: Place the drained capers, lemon juice and olive oil into a small saucepan. Add in the black pepper.
  • Simmer to low flame, cook, stirring continuously for 2-3 minutes.
  • Once the fish is cooked, garnish with the parsley and serve with the warm caper dressing, freshly cooked vegetables.


  • 750 grams thick cod fillets
  • 5 very thin slices of pancetta
  • 3 tablespoon capers in vinegar, drained and soaked in water and drained
  • 1 tablespoon cooking oil
  • 2 tablespoon lemon juice
  • 4 teaspoon olive oil
  • Freshly ground black pepper
  • 1 tablespoon freshly chopped parsley, to garnish
  • Freshly cooked vegetables, to serve
