RATATOUILLE MACKEREL

Preparation Method :

  • Preheat the oven to 190°C/ 375°F/Gas Mark 5.
  • Heat the oil in a large pan and cook the onion and garlic for about 3-5 minutes or until it soften.
  • Add the pepper chunks and courgette slices cook for further 3-5 minutes.
  • Pour in the chopped tomatoes with their juice and cook for a further 5 minutes.
  • Adjust seasoning to taste with salt and pepper and pour into an ovenproof dish.
  • Season the fish with salt and pepper and arrange on top of the vegetables. Spray with a little olive oil and lemon juice.
  • Cover and cook in the preheated oven for about 15-20 minutes.
  • Add the basil leaves and return to the oven for a further 3-5 minutes. Serve immediately with couscous.

INGREDIENTS

  • 1 kg small mackerel, cleaned and heads removed
  • 450 grams chopped tomatoes
  • 1 red pepper, cut the top, deseeded and cut into chunks
  • 1 red onion, peeled, cut into thick wedges
  • 3 teaspoon cooking oil
  • 1 garlic clove, peeled and thinly sliced
  • 2 courgettes, trimmed and cut into thick slices
  • Salt and freshly ground black pepper, to taste
  • ½ teaspoon olive oil
  • Lemon juice for drizzling
  • 12 fresh basil leaves couscous, to serve
