Preparation Method :

  • Cream the butter and cheese together, then stir in the flaked fish, lemon juice, chives and pepper to taste.
  • Beat until the mixture is smooth.
  • Divide the pate between 4 individual ramekins.
  • Garnish each dish by pressing a bay leaf on to the top and serve with wholemeal toast.


  • 500 grams smoked mackerel fillets, skinned and flaked
  • 250 grams full-fat soft cheese
  • 1 tablespoon lemon juice
  • 100 grams butter, softened
  • 2 tablespoon snipped chives
  • 4 small bay leaves, to garnish
  • Pepper
  • Wholemeal toast, to serve
