Preparation Method :

  • Heat the butter in a pan, add the flour and stir fry till golden brown. Remove from flame, pour in the milk and stir. Return to flame and add the egg yolks one-by-one.
  • Add the mashed fish, adjust seasoning and blend thoroughly. Remove from flame and fold-in the stiffly beaten egg whites.
  • Grease a souffle dish with little butter, pour in the fish mixture and then bake in a moderately hot oven for about 20-22 minutes.
  • Serve hot.


  • 250 grams White flesh fish, cleaned, rinsed, boiled, deboned and mashed
  • 400 ml Milk
  • 50 grams Flour
  • 50 grams Butter
  • 6 Egg yolks
  • 8 Egg whites
  • Pepper and salt to taste
