FISH WITH LEMON AND CUCUMBER SALSA

Preparation Method :

  • Place the cod fillets in a small, ovenproof dish, cover them with water at 180°C/350°F/ Gas Mark 4 for 45-50 minutes or until cooked.
  • The Salsa: Mix all the ingredients together and seasoning well.
  • Serve the fish with the salsa.

INGREDIENTS

  • 250 grams frozen chunky cod fillets
  • 2 tablespoons lemon juice
  • 2-inch piece of cucumber, finely diced
  • 3-4 spring onions, sliced finely
  • Freshly ground black pepper, to taste
