Preparation Method :

  • Preheat the oven to 200°C (400°F/Gas 6). Soak the anchovies in the milk for 5 minutes to lessen their saltiness. Drain and rinse.
  • Melt half the butter in a frying pan and cook the onion over medium heat for 5 minutes, or until golden and tender. Chop the remaining butter into small cubes and set aside.
  • Spread half the potato over the base of a shallow ovenproof dish, top with the anchovies and onion and finish with the remaining potato.
  • Pour half the cream over the potato and scatter the butter cubes on top. Bake for 20 minutes, or until golden.
  • Pour the remaining cream over the top and cook for another 40 minutes, or until the potato feels tender when the point of a knife is inserted.
  • Season with salt and pepper before serving.


  • 15 anchovy fillets
  • 4 tablespoons milk
  • 100 grams butter
  • 2 large onions, thinly sliced
  • 5 all-purpose potatoes, cut into 5 mm ( ¼ inch) thick slices, then cut into matchsticks
  • 500 grams thick (double/heavy) cream
