Preparation Time :

Cooking Time :
45 minutes

Preparation Method :

  • Put the fish fillets in a non-metallic dish. Mix the lime zest and juice, wine and garlic together and pour over the fish.
  • Turn the fish and leave to marinate for 30 minutes, turning now and then. Meanwhile, cut the butter into cubes and return to the fridge.
  • Transfer the fish to a plate. Strain the marinade through a sieve into a small saucepan.
  • Bring the marinade to the boil and simmer until reduced to 2 tablespoons.
  • Meanwhile, heat the oil in a large frying pan. When hot, add half of the fish and cook for 3-4 minutes, turning once, or until opaque and cooked through.
  • Repeat with the rest of the fish and keep warm in a low oven.
  • Over a low heat, whisk the butter, cube by cube, into the liquid left in the saucepan, whisking thoroughly after each addition.
  • When half of the butter has been incorporated, a few cubes can be added at a time. Do not allow the sauce to overheat.
  • When all the butter has been incorporated, season to taste. Serve the sauce with the fish, along with some steamed green beans.
