Preparation Method :

  • Beat the eggs in a bowl with the parsley, dill, half of the Parmesan and Pecorino cheeses and the white wine.
  • Adjust seasoning to taste with freshly ground black pepper.
  • Heat the fat in a large frying pan and cook the salmon pieces for 3-5 minutes or until opaque.
  • Add the spaghetti to the pan and immediately add the egg mixture. Remove from the heat and toss well.
  • Stir in the remaining cheeses and the cooked pieces of salmon and toss again.
  • Transfer into a warmed serving bowl. Garnish with sprigs of flat-leaf parsley and serve immediately.


  • 500 grams salmon fillet, skinned, cut into bite-sized pieces
  • 3 medium eggs
  • 400 grams spaghetti, cook as per packet instructions and drained
  • 1 tablespoon freshly chopped parsley
  • 50 grams freshly grated Parmesan cheese
  • 50 grams freshly grated Pecorino cheese
  • 1 tablespoon freshly chopped dill
  • 2 tablespoon dry white wine
  • Freshly ground black pepper
  • 2 tablespoon butter
  • 1½ teaspoon Cooking oil
  • Flat-leaf parsley sprigs, to garnish
