SEA TROUT WITH HERB SAUCE

Sea trout with herb sauce – what a perfect and nutritious seafood! This dish includes chopped fresh dill, fresh parsley, mayonnaise, lemon juice and other components. With its special ingredients, you will perfectly cook this special dish. You can never resist its alluring taste and aroma.

Preparation Method :

  • Place the fish in the centre of a large piece of foil.
  • Add the lemon juice, then dot with the butter. Season to taste.
  • Seal the foil, weigh the fish and place on a banking sheet. Bake at 180°C(350°F) mark4 until tender.
  • Remove the fish from the foil, reserving the cooking liquor, and then carefully remove the skin while still warm.
  • Arrange the fish on a serving dish and leave to cool.
  • To make the sauce, put the cooking liquor and the remaining butter in a saucepan and heat gently.
  • Add the watercress, spinach, parsley, chervil and dill, and then cook for 2-3 minutes, until softened.
  • Put the sauce in a food processor or blender and work until smooth.
  • Transfer to a bowl and add the remaining lemon juice and season to taste.
  • Leave to cool, and then fold in the mayonnaise. Turn into a small serving bowl and refrigerate until required.
  • When the fish is cold, garnish with fresh herbs and whole prawns, if liked.
  • Serve with the herb sauce.

INGREDIENTS

  • 500 grams sea trout, cleaned
  • 25ml lemon juice
  • 25 grams butter
  • Salt and pepper
  • ½ bunch watercress, trimmed and roughly chopped
  • 50 grams fresh spinach leaves, roughly chopped
  • 25 ml chopped fresh parsley
  • 15 ml chopped fresh chervil
  • 2 ml chopped fresh dill
  • 100 ml mayonnaise
  • Fresh herbs and whole unpeeled cooked prawns, to garnish
