Preparation Method :

  • Mix the tuna, onion, breadcrumbs, egg, thyme, parsley and lemon zest in a bowl. Form into four even-sized patties and flatten slightly.
  • Heat a non-stick frying pan with the oil. Cook the patties over medium heat on both sides for 5 minutes, or until browned.
  • Cut the bread into four portions. Cut each portion in half horizontally and place under a grill (broiler) to lightly brown.
  • Spread both cut sides of the bread with mayonnaise.
  • Top with some rocket and layer with a patty, a slice of cheese and slices of tomato, cucumber and onion.
  • Place the other half of the bread on top, cut in half and serve.


  • 350 grams tins lemon pepper tuna, drained
  • 1 large onion, chopped
  • 65 grams dry breadcrumbs
  • 1 egg, lightly beaten
  • 2 tablespoons chopped lemon thyme
  • 1 tablespoon chopped flat-leaf (Italian) parsley
  • 2 teaspoons grated lemon zest
  • 2 tablespoons olive oil
  • 1 loaf pide (Turkish/flat) bread
  • 4 tablespoons whole-egg mayonnaise
  • 150 grams rocket (arugula)
  • 4 slices cheddar cheese
  • 2 tomatoes, sliced
  • 1 cucumber, sliced
  • ½ red onion, sliced
