Preparation Method :

  • Heat the oil in a Balti pan, wok or frying pan over a medium heat. Add the tomatoes, garlic and half the coriander and cook for 5 minutes.
  • Add the Balti sauce and simmer for 2-3 minutes.
  • Add the oysters and cook, stirring continuously, for a further 2-3 minutes.
  • Serve, sprinkled with garam masala and the remaining coriander.


  • 15 oysters, shelled
  • 50 ml sesame oil
  • 4 tomatoes, skinned and chopped
  • 2 clove garlic, crushed
  • 3 tablespoon fresh coriander, chopped
  • 200 ml Balti sauce
  • Pinch of Balti garam masala
