Preparation Method :

  • Place the wine and bay leaves in a large, wide saucepan and bring to the boil.
  • Add the mussels to the saucepan and cook, covered with a tight-fitting lid, over high heat for 4 minutes, or until the mussels open.
  • Meanwhile, place the pasta sauce, sugar, oil and basil in a bowl and mix well.
  • Discard any mussels that have not opened. Drain, reserving the cooking juices.
  • Return the mussels to the saucepan, add the tomato mixture and 125 ml of the reserved cooking juices and stir over high heat for 3-4 minutes, or until warmed through.
  • Sprinkle with chives and serve in warmed bowls with bread.


  • 125 ml dry white wine
  • 2 bay leaves
  • 1 kg black mussels, cleaned and 'beards' removed
  • 500 grams tomato pasta sauce
  • 1-2 teaspoons sugar, to taste
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons shredded basil
  • 2 tablespoons snipped chives
