WELSH COCKLE PIE

Searching for the most delicious seafood is finally over! With welsh cockle pie; you can fully enjoy your meal along with family. This dish consists of butter, fresh milk, streaky bacon, plain flour, white wine, fresh chives, cooked cockles and other ingredients.

20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Melt the butter in a medium saucepan, add the bacon and onion and cook for 5 minutes, until softened.
  • Add the flour and cook for a further minute, stirring.
  • Remove from the heat and gradually stir in the milk.
  • Bring to the boil, stirring continuously, until the sauce thickens, boils and is smooth.
  • Add the cockles, wine and chives. Season to taste and simmer for 2-3 minutes.
  • Turn the mixture into a pie dish. Mix together the breadcrumbs and grated cheese.
  • Sprinkle on top of the mixture.
  • Cook under a hot grill for 5 minutes, until golden brown.
  • Accompany with a salad.

INGREDIENTS

  • 15 grams butter
  • 100 grams streaky bacon, rinded and chopped
  • ½ medium onion, skinned and chopped
  • 25 grams plain flour
  • 250 ml fresh milk
  • 500 ml cooked cockles
  • 25ml dry white wine
  • 25 ml snipped fresh chives
  • Salt and pepper
  • 50 grams fresh whole meal breadcrumbs
  • 50 grams Caerphilly cheese, grated
