SUNNY RICE

The sunny rice is combined with healthy and delicious taste. Its main ingredients include smoked haddock, milk, basmati rice, flat-leaf parsley, frozen petit pois, and other special seasonings. Along with its ingredients, hard boil egg is also placed on its top layer.

Preparation Method :

  • Put the haddock in a large frying pan and pour enough milk over the fish to just cover it.
  • Poach the fish for 5 minutes, or until cooked and opaque.
  • Remove the haddock from the pan and flake the fish, carefully removing the skin and any bones.
  • Discard the remainder of the poaching liquid.
  • Meanwhile, place the rice in a saucepan and cover with the water, then add the bay leaf and cloves.
  • Bring to the boil, then reduce the heat and simmer, covered, for 15 minutes, or until the water has been absorbed and the rice is tender.
  • Discard the bay leaf and cloves. Set aside the covered pan.
  • Melt the butter over a gentle heat in the cleaned frying pan, then add the peas and cook for 2 minutes, or until tender.
  • Stir in the garam masala and turmeric and cook for another minute.
  • Stir in the haddock and rice and mix well until they are coated in the spiced butter.
  • Season and heat through for 1-2 minutes.
  • Stir in the parsley and top with the hard-boiled eggs just before serving.

INGREDIENTS

  • 250 grams undyed smoked haddock or cod fillets
  • Milk, for poaching
  • 100 grams basmati rice, rinsed
  • 250 ml water
  • 2 bay leaves
  • 1 cloves
  • 2 tablespoon butter
  • 25 grams frozen petit pois
  • 1 teaspoon garam masala
  • ½ teaspoon ground turmeric
  • 1 tablespoon chopped flat-leaf parsley
  • 2 hard-boiled eggs, quartered
  • Pepper
