Preparation Method :

  • Put the potatoes into a pan and cover with cold water. Bring to a boil, then reduce the heat, cover, and let simmer for 10 minutes or until just tender. Drain and keep warm.
  • Cook the salmon steaks under the preheated broiler for 10 minutes, turn halfway through cooking. Remove from the broiler and keep warm.
  • Coat the avocado slices in the lemon juice to prevent it from discolouring.
  • Toss the spinach and mixed greens together in a bowl. Add the cherry tomato halves and avocado. Arrange the salad on individual plates.
  • Flake the salmon and divide among the plates along with the potatoes. Sprinkle the walnuts over the salads.
  • Mix the apple juice and vinegar together in a small bowl and season well with pepper. Drizzle over the salads and serve immediately.


  • 1 avocado, cut into half, remove and discard the pit, peel and slice the flesh
  • Juice of ½ lemon
  • 150 grams baby spinach leaves
  • 150 grams mixed small salad greens, including watercress
  • 500 grams new potatoes, Cut into bite-size pieces
  • 500 grams salmon steaks, discard the skin and bones
  • 10 - 12 cherry tomatoes, halved
  • 75 grams chopped walnuts

The Dressing

  • 1 teaspoon balsamic vinegar
  • 3 tablespoon unsweetened clear apple juice
  • Freshly ground black pepper
