Preparation Method :

  • Remove the zest from the grapefruit and lime with a zester and set it aside.
  • Remove all the pith from the grapefruit and segment them.
  • Mix the grapefruit and citrus zests with the onion, coriander, sugar and lime juice and set aside.
  • Mix remaining lime juice, oil and pepper together and brush both sides of the fish.
  • Place under a pre-heated grill and cook for about 4 minutes each side depending on distance from the heat source.
  • To serve, place a coriander sprig on each fish steak and serve with the grapefruit. 


  • 8 grapefruit
  • 2 lime
  • 2 spring onion, finely chopped
  • 3 tablespoons chopped fresh coriander or parsley
  • 2 tablespoon sugar
  • 10 swordfish steaks
  • Juice of 2 lime
  • 4 tablespoons sesame oil
  • Black pepper to taste
  • Coriander sprigs for garnish
