The Chinese-Style Bass is a recipe that you can prepare every day or during a special occasion. This is made of highly nutritional ingredients, so you are ensure that this dish is safe and can help you to maintain your health.

Preparation Method :

  • Rub the fish inside and out with the salt, sugar, sesame oil and soy sauce.
  • Lay a large piece of foil on a table and scatter halt the sliced ginger, garlic and spring onions over it.
  • Lay the fish on them and scatter the remainder on top of it. Wrap the foil round the fish so that it is totally enclosed, and lay on the rack of a fish kettle.
  • Bring about 1 inch water to the boil in the kettle, then lower the rack into it and cover. Boil steadily for 30 minutes, until the fish is cooked.
  • Mix the remaining ingredients in a small bowl.
  • When the fish is ready, unwrap it and slide on to a platter. Strain the juices into the sauce and discard the garlic, ginger and spring onions.
  • Remove the top skin from the fish, give the sauce a final whisk, and pour it over.
  • Serve. 


  • 3 kilograms sea bass, cleaned
  • 2 teaspoon sea salt
  • 2 teaspoon sugar 
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce 
  • 15 thin slices root ginger
  • 4 large cloves garlic, peeled and thinly sliced 
  • 8 spring onions, sliced lengthwise
  • 4 tablespoons dry vermouth 
  • 4 tablespoons sunflower seed oil 
  • 2 tablespoon sesame oil
  • 2 tablespoon soy sauce
