Japanese Steamed Whole Fish is such a delicious and healthy food you must not take for granted! It contains many ingredients like spring onions, root ginger, mushrooms, sea bass, bamboo shoots, soy sauce, dry sherry, cooked ham and salt! Pick them up before you set them on a plate!
Serves :

Preparation Time :
30 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Dry the mushrooms and discard the stalks.
  • Slash both sides of the fish diagonally, as deep as the bone, at intervals of about 1inch.
  • Dry the fish thoroughly with paper towels then place it on a plate.
  • Arrange the ginger root, spring onions, ham, mushrooms and bamboo shoots on top of the fish.
  • Mix the sherry, soy sauce and salt in a jug and pour it all over the fish.
  • Steam vigorously for 15 minutes and serve. 


  • 4 dried shiitake mushrooms, soaked in tepid water for 20 minutes 
  • 1 kilogram sea bass or perch, scaled and cleaned
  • 4 slices root ginger, peeled and finely shredded 
  • 4 spring onions, finely shredded
  • 100 grams cooked ham, finely shredded
  • 100 grams bamboo shoots, finely shredded 
  • 6 tablespoons dry sherry 
  • 6 tablespoons soy sauce
  • 2 teaspoon salt
