STEAMED SWEET AND SOUR FISH

If you’re terribly looking for a new recipe, Steamed Sweet and Sour Fish is the perfect one for you! This dish is something you can be proud of! One thing is that it’s even made healthier because of its ingredients; whole plaice, spring onions, root ginger and many more! You’ll surely find this dish quite irresistible!

Preparation Method :

  • Score the fish by making 3 diagonal cuts on each side. Rub the fish with salt and sprinkle with the ginger and spring onions.
  • Put on an ovenproof plate and place in a steamer. Steam for 12 to 15 minutes until tender.
  • Meanwhile, make the sauce. Mix all the ingredients, except the corn flour, together in a small saucepan, bring to the boil and cook for 1 minute.
  • Blend the corn flour with 2 tablespoons water and stir into the sauce. Cook, stirring, until thickened.
  • Carefully lift the plaice on to a warmed serving dish. Spoon over the sauce and serve at once.
  • Garnished with coriander and tomato flowers.

INGREDIENTS

  • 2 large whole plaice, cleaned 
  • Salt
  • 2 inch piece root ginger, peeled and shredded 
  • 6 spring onions, sliced

Sauce

  • 300 ml fish or chicken stock 
  • 2 tablespoon soy sauce
  • 2 tablespoon sugar 
  • 2 tablespoon wine vinegar
  • 2 tablespoon dry sherry 
  • 2 tablespoon tomato puree
  • 2 teaspoon chili sauce
  • Pinch of salt 
  • 2 tablespoon corn flour

Garnish

  • Coriander leaves
  • Tomato flowers
