Whiting with wine and mustard sauce – perfect dish for all! You can instantly have this without exerting a lot of effort. This dish is made with butter, whiting fillets, white wine, cream, lemon juice and other essential ingredients. With its mustard sauce, the menu appears more appetizing.

Preparation Method :

  • Melt 50 grams of butter in a flameproof casserole and add the shallots, parsley and salt and pepper to taste.
  • Place the whiting on top and sprinkle with more salt and pepper.
  • Mix the mustard and wine together, pour over the whiting. Cover and cook in preheated moderately hot oven (200°C/400°F, Gas Mark 6) for 10 minutes until the fish is tender.
  • Carefully transfer fish to warmed plates and keep hot.
  • Boil the cooking juices on top of the stove for 2 to 3 minutes, then stir in the remaining butter, the cream and lemon juice. Taste and adjust seasoning, then pour over the fish.
  • Serve immediately with croquette potatoes.


  • 100 grams butter 
  • 4 shallots, peeled and finely chopped 
  • 4 tablespoons chopped parsley salt
  • Freshly ground pepper 
  • 1 kilo grams whiting fillets 
  • 4 teaspoons prepared hot mustard 
  • 8 tablespoons dry white wine
  • 4 tablespoons single cream 
  • 4 tablespoons lemon juice
