PRAWNS WITH CASHEW NUTS

Preparation Method :

  • Mix together the ginger, garlic, corn flour, bicarbonate of soda, salt, pepper and sugar.
  • Place the prawns in the dry ingredients and leave to stand for 20 minutes.
  • Heat the oil in a wok and when hot add the prawns. Cook, stirring over high heat for about 20 seconds. Transfer to a plate.
  • Add the onion to the same oil in the wok and cook for about 1 minute. Add the courgettes and red pepper and cook about 30 seconds.
  • Mix the sauce ingredients together and add to the wok. Cook, stirring constantly, until the sauce is slightly thickened. Add the prawns and the cashew nuts and heat through completely.

INGREDIENTS

  • 1 teaspoon chopped fresh ginger
  • 2 teaspoon chopped garlic
  • 3 tablespoons cornflour
  • ½ teaspoon bicarbonate of soda
  • Salt and pepper
  • ½ teaspoon sugar
  • 500 grams uncooked prawns
  • 100 ml sesame oil
  • 2 small onions, cut into dice
  • 4 small courgettes, cut into cubes
  • 2 small red pepper, cut into cubes
  • 100 grams cashew nuts

Sauce

  • 200 ml chicken stock
  • 2 tablespoon corn flour
  • 3 teaspoons chilli sauce
  • 3 teaspoons bean paste
  • 3 teaspoons sesame oil
  • 2 tablespoon dry sherry
