Preparation Method :

  • Heat a wok to very hot, add the oil and swirl to coat the side.
  • Add the garlic, lemongrass and ginger and stir-fry for 1-2 minutes, or until fragrant.
  • Add the prawns and cook for 2-3 minutes, or until pink and cooked.
  • Add the snow peas, spring onion, sprouts, rice wine, oyster and soy sauces and toss until heated through and the vegetables start to wilt.


  • 1½ tablespoons cooking oil
  • 3 garlic cloves, thinly sliced
  • 1 lemongrass stem, white part only, finely chopped
  • ½ tablespoons thinly sliced fresh ginger
  • 1 kg raw medium prawns (shrimp), peeled and deveined, tails intact
  • 200 grams snow peas (mangetout), trimmed and cut into 3-4 strips lengthways
  • 6 spring onions (scallions), thinly sliced on the diagonal
  • 80 grams snow pea (mangetout) sprouts
  • 1 tablespoon Chinese rice wine
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
