Preparation Method :

  • Heat a wok over medium heat, add the oil and swirl to coat the side. Add the garlic and ginger, and stir-fry for 30 seconds, or until fragrant.
  • Add the peas to the wok and cook for 1 minute, then add the scallops and spring onion and cook for 1 minute, or until the spring onion is wilted.
  • Stir in the oyster and soy sauces, sesame oil and sugar and heat for 1 minute, or until warmed through. Serve with rice.


  • 2 tablespoons cooking oil
  • 2 large garlic cloves, crushed
  • 3 teaspoons finely chopped fresh ginger
  • 300 grams sugar snap peas
  • 500 grams scallops, without roe, membrane removed
  • 2 spring onions (scallions), cut into 2 cm ( ¾ inch) lengths
  • 2½ tablespoons oyster sauce
  • 2 teaspoons soy sauce
  • ½ teaspoon sesame oil
  • 2 teaspoons sugar
