Preparation Method :

  • Mix all the remaining ingredients and to a fine paste and apply over the fish evenly. Set it aside for 1-2 hours
  • Preheat the oven to 175 °C / 350 °F.
  • Skewer the fish from tail to mouth. Roast in the oven for 12-15 minutes. Keep a tray underneath to collect the drippings.
  • Baste with oil. Remove and hang the skewers and let the excess moisture drip off.
  • Garnish with sliced cucumbers, coriander sprigs , tomatoes and onions.


  • 400 grams fish, with single central bone
  • 3 tablespoon Malt vinegar 
  • 2 teaspoon Black pepper powder
  • 2 teaspoon Fennel seeds 
  • 50 grams Ginger-garlic paste
  • 150 grams Yoghurt, drained
  • 50 ml IDHAYAM sesame oil
  • 3 tablespoon Gram flour 
  • 4 teaspoon Red chilli powder
  • 5 teaspoon Lemon juice
  • 1 teaspoon Turmeric powder
  • Salt to taste
