Preparation Method :

  • Cut a 'lid' off the loaf, remove the inside of the bread and put aside to use for breadcrumbs later. Drizzle half of the vinaigrette into the bread cavity.
  • Layer the remaining ingredients into the loaf and drizzle the remaining vinaigrette. Season well and then replace the 'lid'.


  • 5 tablespoon reduced-fat mozzarella, sliced thinly
  • 50 grams fat-free vinaigrette
  • 2 plum tomatoes, sliced
  • 1 small round rustic loaf
  • 8 slices of Parma ham or lean cooked ham
  • 10-12 pitted olives, halved lengthways
  • 50 grams cucumber, sliced thinly
  • 50 grams rocket or lettuce leaves
  • 3 spring onions, sliced
  • 1 large carrot, grated
  • Salt and freshly ground black pepper, to taste
