Preparation Method :

  • Mix spring onions, salmon, breadcrumbs, lemon juice, butter with salt and black pepper in a bowl. Combine eggs and hot milk in a separate bowl and stir it into salmon mixture.
  • Spoon mixture into 4 buttered 250 ml souffle dishes.
  • Preheat oven to 160°C / 325°F. Arrange dishes in a shallow pan of water and bake for about 20 - 30 minutes or until puffy and just set.
  • Set the dishes on warmed serving dinner plates.


  • 1 tablespoon lemon juice
  • 100 ml hot milk
  • 2 tablespoon melted butter
  • 250 grams pink or red salmon, drained and flaked
  • 75 grams fresh breadcrumbs
  • 6 spring onions, chopped
  • Freshly ground black pepper and Salt to taste
  • 2 eggs, beaten 3
