Pancake Squares can be served to your child right away- with baking powder, tomato sauce, eggs, boneless chicken, corn kernels and boneless chicken! What a wonderful dish it could be once you’ve finally prepared Pancake Squares! Expect for more compliments from your kid as he enjoy licking and tasting it!

Preparation Method :

  • Filling: Heat butter in the pan. Add in the spring onions and garlic followed by the capsicum, shredded chicken, tomato ketchup, corn, salt, pepper and mustard paste , stir fry for about 1 minute. Remove from heat.
  • Pancakes:Beat eggs lightly. Add milk. Add the maida and beat well to a smooth batter.
  • Heat a small non stick pan. Grease it slightly. Add 2 tablespoon of batter and rotate the pan to spread the batter completely over the bottom of the pan to get a small pancake.
  • Cook on low to keep it very light golden in colour. Cook on one side only, do not turn side, remove from heat. Keep the pancakes aside.
  • Assemble:Place the pancake with the cooked side down on a flat surface. Spread at least ½ teaspoon of cheese in the centre portion.
  • Spoon a little filling on the cheese, fold all the four sides to get a small square.
  • Stick the sides with a little left over batter of the pancakes.
  • To serve, keep the pancakes on a greased baking tray, keeping the tucked side down. Sprinkle 1 tablespoon of grated cheese and coriander on each pancake.
  • Bake for 10 minutes in hot oven at 200°C or until the pancakes turn a little brown and the cheese melts.
  • Serve hot on a platter garnished with lettuce.


  • Sift maida, salt and baking powder
  • ¼ teaspoon baking powder
  • 200 grams plain flour 
  • 2 eggs
  • 350 ml milk
  • 1 tablespoon butter
  • 6 flakes garlic - crushed
  • 1 tablespoon tomato sauce
  • 3 spring onions - chopped finely up to the greens
  • 2 small capsicums - chopped finely
  • 100 grams boiled and shredded boneless chicken
  • 75 grams cooked corn kernels 
  • 2 tablespoon grated cheese 
  • 2 teaspoon mustard paste
  • Salt, Pepper and Chili powder to taste
  • 150 grams grated pizza cheese 
  • Coriander sprigs
