Preparation Method :

  • Egg Filling: Put the eggs in a bowl, add the mayonnaise, mustard, and cayenne pepper and stir together with salt and pepper to taste. Cover and chill until ready to use.
  • The Deviled Egg Triangles: Spread the butter over the bread slices. Spread the deviled egg mixture over 6 of the slices, then snip cress over the tops.
  • Top with the remaining bread slices, buttered sides down. Cut off the crusts, then cut each sandwich into 4 triangles.
  • Wrap tightly in plastic wrap and chill until ready to serve. Unwrap and arrange on a plate, then snip more cress over the tops.


  • 4 hard-cooked large eggs, shelled and finely chopped
  • 2 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • Unsalted butter, softened
  • 12 slices whole-wheat bread
  • 2 punnets salad cress
  • Pinch cayenne pepper
  • Salt and pepper
