Preparation Method :

  • Boil the peas and vegetable stock in a medium saucepan. Cook, covered for about 5-7 minutes or until the peas are cooked.
  • Put in a liquidiser with the fromage frais and blend.
  • Blend the soup with the cornflour to a smooth paste.
  • Pour the soup and the cornflour paste back into the saucepan over a medium heat and stir until the soup has thickened.
  • Add the mint leaves and serve.


  • 900 ml vegetable stock
  • Few Mint leaves
  • 225 grams frozen peas
  • 50 grams very low-fat plain fromage frais
  • 2 tablespoons cornflour
