AVOCADO AND CORN SOUP

Preparation Method :

  • Mix the peeled avocados with vegetable stock, lemon juice and salt. Blend it in a mixer until smooth.
  • Heat oil in a saucepan and sauté garlic for a few minutes. Add the avocado mix in the saucepan and mix well.
  • Add the corn kernels to the mixture and cook on medium flame until it starts steaming. Soup is ready.
  • Season with salt and pepper according to taste. Garnish with coriander leaves. Serve hot.

INGREDIENTS

  • 2 medium avocados (ripe), Halved, Peeled and remove the pit
  • 150 grams corn kernels, boiled and crushed
  • 1 litre vegetable stock
  • 1 tablespoon lemon juice
  • 2 cloves garlic, crushed
  • ½ teaspoon white pepper powder
  • 25 grams coriander leaves, chopped
  • Salt to taste
  • 1 tablespoon Cooking oil
