Preparation Method :

  • Put the vegetables with stock into a saucepan. Bring to the boil, cover and then simmer for 15-20 minutes or until the vegetables are cooked.
  • Place half the soup with half of the butter beans and blend until smooth.
  • Return to the pan with the rest of the beans. Heat through, adjust seasoning with pepper and serve.


  • 750 ml vegetable stock
  • 5-6 potatoes, diced
  • 2 large carrots, chopped
  • 2 celery sticks, sliced
  • 1 onion, chopped
  • 400 grams canned butter beans, well rinsed and drained
  • Freshly ground black pepper
