BERCY BUTTER

Preparation Method :

  • Place the spring onions (scallions) and wine in a small pan and boil until reduced to 1 tablespoon.
  • Strain and cool, then blend into the softened butter with the remaining ingredients.
  • Serve with grilled (broiled) meats.  

INGREDIENTS

  • 4 teaspoons finely chopped spring onions
  • 400 ml dry white wine
  • 100 gram butter, softened 
  • 4 teaspoons finely chopped parsley 
  • Salt and freshly ground pepper
