Preparation Method :

  • Preheat the oven to Gas Mark 6/200°C/400°F.
  • Brush each piece of filo with a little of the olive oil, then cut into quarters. Line 4 loose-bottomed flan tins with 4 squares of the pastry each, then brush with the remaining oil.
  • Place half of the tomatoes in the bottom of the tarts, cover each with a slice of cheese and then top with the remaining tomatoes.
  • Sprinkle over the oregano and season well.
  • Cook for 10 minutes or until the pastry is golden and the cheese begins to melt. Serve hot.


  • 250 grams cherry tomatoes, halved
  • 100 grams cut into 4 slices, firm goat's cheese
  • 4 filo pastry sheets, 10 inch squares
  • 1 tablespoon olive oil
  • 2 teaspoon chopped fresh oregano
  • Salt and freshly ground black pepper, to taste
