SPINACH, POTATO AND RICOTTA PARCELS

Preparation Method :

  • Preheat the oven to 180°C / 350°F/ Gas Mark 4.
  • Heat half of the oil in a non-stick frying-pan, add the onion with garlic and fry for about 2 minutes.
  • Add the potato, nutmeg and spinach, cook for further 5 minutes or until all the liquid from the spinach has evaporated.
  • Stir in the ricotta and season well.
  • Brush a sheet of filo with a little oil. Place another sheet of filo on top and brush with oil.
  • Repeat with the remaining two sheets and cut each pile in half diagonally into triangles.
  • Spoon the potato mixture onto the centre of each of the triangles.
  • Fold the ends of the pastry over the filling, form a parcel. Brush each parcel with the remaining oil, place on a baking sheet and cook for 10-12 minutes or until golden.

INGREDIENTS

  • 150 grams frozen chopped spinach
  • 1 tablespoon cooking oil
  • 100 grams ricotta cheese
  • 1 onion, chopped finely
  • 1 garlic clove, crushed
  • 50 grams potato, cooked, peeled and cut into ½ -inch cubes
  • ½ teaspoon grated nutmeg
  • 4 filo pastry sheets 10 inches square
  • Salt and freshly ground black pepper, to taste
