Preparation Method :

  • Heat the oil in a 20-cm/8-inch omelette pan.
  • Add the onion and cook for about 5 minutes until soft.
  • Add the potatoes and cook gently for about 10 minutes until just soft.
  • Add the pepper, courgette, petit pois and parsley and cook for 2-3 minutes,
  • Beat the eggs with 1 tablespoon of cold water. Pour over the vegetables in the frying pan.
  • Cook over a very low heat for 5-10 minutes or until the mixture is beginning to set on top and is golden underneath when the edge is lifted with a spatula,
  • Place under a medium grill for 1-2 minutes until the top is set and golden brown.
  • Cool and cut into wedges or strips to serve.


  • 1½ tablespoon cooking oil
  • Small onion, chopped
  • 100 grams waxy potatoes, diced
  • Red pepper, deseeded and thinly sliced
  • 2 small courgette, diced
  • 3 tablespoon frozen petit pois
  • 3 tablespoon chopped fresh parsley
  • 5 eggs, beaten
