Preparation Method :

  • Stir-fry the potatoes in the oil for about 10-12 minutes or until they turn golden and cooked.
  • Add the sweetcorn. Season the eggs and pour over the potato and sweetcorn mixture.
  • Cook for about 10 more minutes or until the eggs set around the edges of the pan.
  • Preheat the grill to high. When the frittata has cooked, put it under the grill and cook until the top turns golden.
  • Divide into wedges and serve hot or cold.


  • 220 grams canned sweetcorn, drained
  • 250 grams new potatoes, diced
  • 3 teaspoon groundnut oil
  • 6 eggs, beaten
  • Freshly ground black pepper and salt, to taste
