Preparation Method :

  • Cook the garlic, seeds, sambal, cinnamon, cloves, nutmeg and chilli with oil in a pan.
  • Simmer to low flame for about 2 minutes or until fragrant. Remove mixture from heat, blend until finely ground.
  • Mix the flours with water and buttermilk mixture, spice mixture to a smooth batter.
  • Heat the oil in medium saucepan. Place spoonfuls of batter onto large perforated spoon over oil, tap edge so batter drips through holes and into hot oil.
  • Cook batter drops until golden brown, remove from oil using slotted spoon; drain on absorbent paper. Sprinkle with salt.


  • 150 grams besan flour  
  • 15 ml peanut oil
  • 2 cloves garlic, crushed
  • 150 grams self-raising flour
  • 1 teaspoon coriander seeds
  • 1 teaspoon black mustard seeds
  • 200 ml warm water
  • 2 teaspoons sambal oelek
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 100 ml buttermilk  
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon chilli powder
  • Salt, to taste
  • peanut oil for deep-frying
