TIKKA KEBAB

Preparation Method :

  • Place the lamb in a bowl and sprinkle with the lemon juice.
  • Drop the yogurt, chopped onions, garlic, vinegar, turmeric, salt and black pepper in a food processor and process until mixture is blended.
  • Pour over the lamb, toss to coat, cover and marinate overnight.
  • Thread the cubes of meat onto the skewers, alternating with the green or red pepper and quartered onions.
  • Barbecue or grill the kebabs, turning frequently until golden brown and cooked through.
  • Serve hot, garnished with lemon quarters.

INGREDIENTS

  • 150 grams natural yogurt
  • 2 onions, chopped
  • 750 grams boned lamb shoulder or leg, cut into small cubes
  • 3 cloves garlic, chopped
  • 1 tablespoon vinegar
  • Juice of 1 lemon
  • ½ teaspoon ground turmeric
  • 1 green or red pepper, cored, seeded and cut medium size squares
  • 2 onions, quartered
  • Freshly ground black pepper and Salt, to taste
  • 1 lemon, quartered, for garnish
