PERSIAN LAMB STEAKS

Preparation Method :

  • Place the lamb steaks in a glass dish. Mix together the lemon juice, cardamom, coriander and yogurt and pour over the lamb. Turn the steaks and leave, covered, for 1 hour.
  • Melt the butter in frying pan (skillet), add the onion and ginger and cook for 2 to 3 minutes, stirring. Add lamb steaks and fry for 6 to 8 minutes on each side until tender.
  • Remove and keep warm. Skim or pour away any fat in the pan, then add any remaining marinade, and a little milk if necessary, and make gravy by scraping up the brown bits from the bottom of the pan.
  • Add salt and pepper to taste, pour the gravy over the steaks.
  • Serve with Persian Crusty Rice.

INGREDIENTS

  • 4 lamb steaks
  • 4 tablespoons lemon juice
  • ½ teaspoon ground cardamom
  • 1 teaspoon coriander seeds, ground
  • 250 ml plain yogurt 
  • 50 gram butter
  • 2 small onion, chopped 
  • ½ teaspoon ground ginger or
  • 4 slices fresh root ginger, Chopped
  • Salt and freshly ground pepper
