STEAK WALDORF WITH A PEAR & BLUE CHEESE SALAD

Steak waldorf with a pear & blue cheese salad – the best dish that combines with tasty ingredients! The ingredients include mustard, fresh tarragon, walnuts, coriander, cream and other added components. Get this menu with its simple procedures and you and your family will surely enjoy this.

Preparation Method :

  • Trim the fillet steaks remove fat.
  • 02Put olive oil, salt, pepper, sliced shallots, garlic, tarragon and English mustard in a deep bowl and mix it thoroughly.
  • Place the beef fillets in the marinade, cover it completely with cling film and refrigerate for 48 hours.
  • Using a large deep non-stick frying pan, quickly seal and fry the steaks for 3 minutes on each side, reserving the marinade.
  • Remove the steaks from the pan and place on a warm serving dish.
  • Add the marinade to the pan, bring it to the boil and sprinkle it with the flour. Add the beef stock, diced apple and walnuts.
  • Let the sauce simmer gently for 5-6 minutes. Place the steaks back in the sauce, add the cream and cook for another 2 more minutes.
  • Blend the salad ingredients together, then place a little salad on each plate with a steak and some of the Waldorf Sauce.

INGREDIENTS

  • 220 grams fillet steaks
  • 4 tablespoons olive oil
  • Salt and freshly ground black pepper (to taste)
  • 6 shallots, peeled and sliced
  • 1 peeled and crushed clove garlic
  • 2 tablespoons chopped fresh tarragon
  • 1 tablespoon English mustard
  • 1 tablespoon plain flour
  • 150 ml Basic Beef Stock
  • 1 apple, cored and finely diced
  • 1 tablespoon chopped walnuts
  • 2 tablespoons double cream

For the salad

  • 225 grams (8oz) boiled rice, well drained and chilled
  • 2 large dessert pears, cored and diced
  • 150 grams (5oz) blue cheese, diced
  • 1 red pepper, de-seeded and diced
  • Salt and freshly ground black pepper
  • 1 tablespoon chopped fresh coriander
  • 1 tablespoon sesame oil
