Preparation Method :

  • Top and tail the beans, and cook in boiling salted water until tender.
  • Meanwhile make the sauce: melt the butter in a small pan. Stir in the flour, cook for 1 minute, and then gradually blend in the stock.
  • Bring the sauce to the boil, stirring constantly. Add salt and pepper to taste and the herbs. Reduce the heat and simmer the sauce for 5 minutes.
  • Beat the egg yolk with the lemon juice. Remove the sauce from the heat, stir in the egg mixture and reheat without boiling.
  • Drain the beans, arrange in a heated serving dish and pour the sauce over.
  • Serve immediately.


  • 500 gram green beans 
  • Salt and freshly ground pepper 
  • 30 gram butter 
  • 2 teaspoon plain flour
  • 250 ml chicken stock or marjoram 
  • 2 egg yolk
  • 2 tablespoon lemon juice
