Preparation Method :

  • To make the dressing, mix oil with lemon juice, a large pinch each of salt and pepper and set aside.
  • Boil a large pan of salted water, then cook sliced French beans for about 8 minutes until tender.
  • Drain well and leave to cool a little. Toss the beans with half the dressing, roughly chopped walnuts and arugula.
  • Place in a dish and scatter with shaved parmesan, then drizzle over the remaining dressing.


  • 100 ml Sesame oil
  • 5 tablespoon lemon juice
  • A large pinch each of salt and pepper
  • 500 grams strung sliced French beans
  • 100 grams roughly chopped walnuts
  • 100 grams arugula
  • 50 grams shaved parmesan
