Preparation Method :

  • Heat the oil in a large non-stick frying-pan. Add the onion, chili and garlic and fry for 2 minutes or until softened.
  • Add the cumin, coriander and paprika and continue to cook for 1 minute.
  • Stir in the beans and tomatoes and heat through.
  • Transfer to a blender and blend until almost smooth, but still retaining a little texture.
  • Stir in the coriander and serve.


  • 420 grams black-eyed beans, drained and rinsed
  • 1 red chili, chopped
  • 1 garlic clove, crushed
  • 2 teaspoon Cooking oil
  • 1 teaspoon ground cumin
  • 1 onion, chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 2 tomatoes, chopped
  • 2 tablespoons chopped fresh coriander
  • Salt and freshly ground black pepper, to taste
