WINTER VEGETABLE CURRY

Preparation Method :

  • Cut carrots, parsnips, swede, potatoes and Sweet potatoes into 2cm pieces.
  • Heat ghee in pan, add onions, garlic and ginger, cook, stirring, until onions are soft.
  • Add spices, cook, stirring, until fragrant.
  • Add chopped vegetables to pan, stir in undrained crushed tomatoes, simmer, covered, 15 minutes.
  • Remove lid, simmer, stirring occasionally, further 30 minutes or until vegetables are tender. Stir in yogurt.

INGREDIENTS

  • 250 grams carrots
  • 250 grams parsnips
  • 250 grams swede
  • 500 grams old potatoes, peeled
  • 500 grams Sweet potatoes, peeled
  • 50 grams ghee
  • 500 grams onions, sliced
  • 4 cloves garlic, crushed
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cardamom
  • ½ teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • ½ teaspoon chili powder
  • 1 kg tomatoes
  • 2 tablespoons plain yogurt
