Preparation Method :

  • Combine cream cheese and white pepper in a bowl and mash with back of a fork. Stir in milk to make a spreadable paste. Stir in finely chopped mint and shallots until well blended.
  • Spread each piece of bread with cream cheese mixture, then top with overlapping cucumber slices. With a sharp knife, cut each sandwich in half on the diagonal and garnish with a mint sprig.  


  • 150 grams full-fat or low-fat cream cheese at room temperature
  • 1 teaspoon white pepper
  • 3 Tablespoon full cream or low-fat milk
  • 25 grams fresh mint leaves, finely chopped, plus extra sprigs for garnish
  • 4 Tablespoon finely chopped shallots
  • 8 thin slices dark rye bread
  • 2 cucumber, peeled and thinly sliced
