Preparation Method :

  • Place a piece of wet greaseproof paper on the base of a steamer compartment.
  • Top with peas, spring onions, lettuce, mint, parsley, sugar, margarine and garlic.
  • Season well with salt and pepper. Cover with a tight-fitting lid and steam over boiling water for 1 hour.
  • Check the liquid level frequently and add more water if necessary.
  • After 1 hour, check that the peas are tender.


  • 2 kg shelled fresh peas
  • Bunch of spring onions, trimmed and sliced
  • 16 Cos lettuce leaves, washed and shredded
  • 6 mint sprigs
  • 2 tablespoon chopped parsley
  • Pinch of caster sugar
  • 50 grams margarine
  • 2 clove garlic, peeled and crushed
  • Salt
  • Freshly ground black pepper
